Lockdown recipe: Anzac Biscuits

Anzac Day is such a special day for all us Australians and we wish we could be opening up our doors with you all but this year we’ll have to come together in spirit, instead of in person. Commemorate our ANZACs on our National Day of Remembrance by baking our tasty Anzac Biscuits and enjoy with a cuppa or lash out with a side of ice-cream.

As let’s face it there’s nothing quite like a home-made Anzac Biscuit, fresh from the oven, warm and chewy with a little bit of crunch. And there’s no better way than to brush up on those baking skills than during isolation? Put those aprons on and pre-heat the oven as we bake up a storm with this Anzac Biscuit recipe supplied by our very own Head Chef, Ben from The Cookery at Erindale Vikings.

Anzac Biscuits

Serves 24

Ingredients

·   1 cup plain flour

·   1 cup caster sugar

·   1 cup coconut

·   1 cup rolled oats

·   125g Butter

·   1 tablespoon golden syrup

·   1 teaspoon bicarbonate of soda

·   2 tablespoons boiling water

Instructions

1. Preheat oven to 170 degrees and line two baking trays with baking paper.

2. Mix together the plain flour, caster sugar, coconut and rolled oats in a large bowl.

3. Melt the butter and add the golden syrup and bicarbonate of soda (dissolved in the boiling water).

4. Make a well in the centre of the bowl, add the liquid and stir through.

5. Use a tablespoon to scoop up mixture and roll into small balls.  Place on the tray and flatten slightly.

6. Bake for 18 minutes, or until the biscuits have turned a dark golden colour. If you prefer your Anzac Biscuit a little bit crispier bake for a further 20 minutes. We like our biscuits to be a little chewy in the middle!
