It's the start of a new chapter at Town Centre Vikings
There is more than just a change of season coming for Town Centre Vikings. There is a change of guard on its way for Baa Moo Bistro.
After 11 years running the catering, Kate & Laurie McCulloch are ‘hanging up their hospitality aprons’ and moving on to their next adventure. However, their son and Town Centre Vikings newest Group Head Chef, Josh, is staying with the Vikings Group as we bring the catering under our umbrella.
“I am excited to be offered this position and to be able to continue to be a part of the Vikings Group – just a little more closely now. However, it will be very different working here without Mum & Dad. I have a really special relationship with my Mum. We are tight and I am going to miss her being here all the time. It will be nice to have a few less arguments with her – you have family members working together in a small hot space and eventually someone will snap - I won’t miss that, however, I will absolutely miss my Mum.”
It’s been a long relationship with the Vikings Group and a lot has happened at Town Centre Vikings over the past 11 years while Josh has been the Executive Chef at Baa Moo Bistro. “We have celebrated everything with our regulars and it’s that connection that has been the highlight for me. We have hosted every family celebration you can think of; christenings, birthdays, school graduations, engagements, anniversaries – there have been five 100th Birthday celebrations here. It’s a special place for so many people, including us and I am excited I get to stay here to see these celebrations continue.”
With a new guard comes a new menu complete with new pricing. “People will see a difference in what we offer from 28 June. I am working closely with Vikings Group Executive Chef, Ben Cridland and am excited to see what will be happening. It’s going to be fun. Still, the great quality food our patrons are used to – though some of the prices may be able to be reduced due to the ability for us to purchase items in bulk as we share them across our venues. Watch this space.”
Vikings Group would like to thank Kate & Laurie McCulloch for all they have done at Baa Moo Bistro and wish them all the best as they write the next chapter in their book. Kate will be working most weekends until Saturday 25 June so if you would like to say your farewells we encourage all of you to come down.
Meet Town Centre Bistro Supervisor, Brittany
We are excited about the changes that are coming to the Bistro at Town Centre Vikings, however, our members will be pleased to know that you will still see some of the familiar faces that you’ve come to know and love. One of these friendly familiar faces which we are sure many of you will recognise is Town Centre Viking’s new Bistro Manager, Brittany.
Brittany has been at Town Centre Vikings for a year and a half and has enjoyed her role as BaaMoo’s Supervisor so much that she decided to stay. “I love Vikings. I love all the members here; everyone is so friendly, and it is such a friendly atmosphere to work in. What I love most about my job is the people I get to work with, especially in the kitchen, we are all like a family here, which is something that will continue into the future”.
Between studying Interior Design, working at BaaMoo and helping her partner run the carwash at Erindale, when asking Brittany what she’s most excited about her new role, she was quick to reply with more responsibility. “I am excited to step up, it’ll be fun and additionally work on upgrading the booking system and hopefully continue to help run functions”.
Brittany is happy the bistro is bringing along her favourite dish to the new menu. “Members will notice the drop in prices and a few new items on the menu, but I’m excited that Josh’s famous Chicken Avocado with hollandaise sauce made the cut. It is my go-to and one I highly recommend.”
